Weekend Breakfast Casserole

Weekend Breakfast Casserole

Makes a great special breakfast with some whole grain toast and jam and some fresh cut up fruit!

Defrost one box of Sunshine Breakfast Patties in the refrigerator over night. Take them out in the morning.

Preheat your oven to 375 degrees.

In a large fry add:

  • One Tablespoon of olive oil
  • One red or orange chopped bell pepper
  • One green chopped bell pepper
  • One small onion (optional)
  • Some salt and pepper

Sauté' till almost tender.

Place your veggies in a large bowl and add:

  • One pound bag of frozen hash brown potatoes and stir.

Oil a 3 quart casserole dish and add half the bowl of potato and veggie mix.

Crumble the veggie breakfast patties for the next layer.

Put the rest of the potato and veggie mix on top of this

Bake at 375 degrees until golden brown!

Serve with some whole grain toast with jam and some fresh cut fruit...awesome!
